Radish & Asparagus Salad
This is spring in a bowl. Asparagus and radishes are in season at the moment, so they taste absolutely delicious. With Produce this good you really don’t need to over complicate it with heavy dressings. Lemon and olive oil always work best!
- A handful of Radishes
- 10-12 asparagus spings
- 2 handfuls of spinach
- olive oil
- 1 lemon
- salt & pepper
- Start by breaking off the heads of the asparagus and put them to one side. Then, use a peeler to cut the asparagus spring into thin strips. Throw all the asparagus into a pan with a little olive oil and lightly fry for a few minutes. Take off the heat and add to a big bowl
- Thinly slice the radishes and add them to the asparagus. If you have some radish leaves roughly chop some of those too add to the bowl.
- Add the spinach and give it a good mix.
- Squeeze the lemon over all the veggies, then season with plenty of salt & pepper and finally drizzle a little more olive oil.
