Cinnamon Apple & blueberry slice
One of my faves
1 red apple
100g blue berries
1tbs coconut oil
1 tsp cinnamon
½ tsp nutmeg
2 tsp spelt flour
½ tsp vanilla powder
Splash of milk
Turn the oven up to 180 degrees
Chop the apple into small cubes. In a skillet start melting 1tbs of coconut oil and then add the apple. Add the cinnamon and nut meg and occasionally stir for about 5 minutes until the apple has softened. Add the blue berries and give it another stir.
In a bowl or a blender add the 3 eggs, flour, vanilla and splash of milk and whisk/ britz until smooth.
Once the blueberries have begun to burst pour the eggy mixture over the apples and blueberries. Leave it for about 4-5 minutes for the bottom to cook then transfer the skillet to the oven so the top can firm up. This should take about 5-7 minutes.
Drizzle with maple syrup and enjoy!
