Chocolate & Miso Banana Loaf
My banana loaf just got upgraded. A chocolate & miso upgrade!! The salty miso paste has given it a salted caramel kick and it’s unbelievable. I was inspired to add miso to my favourite banana bread recipe after a workshop with Miso tasty. After playing around with the quantities, this banana bread hits the spot. If there are still left overs after a day, try toasting it with a spread of butter 🙂
100g almond flour
100g spelt flour
1tsp vanilla powder
3 tbs raw cacao powder
1tsp baking powder
4 eggs separated
5 tbs maple syrup
1tbs sweet while miso
Preheat the oven to 180 degrees.
In a large bowl, combine all the dry ingredients and mix well.
In a food processor add the egg yolks, 2 bananas, maple syrup and the miso and blend until a smooth past forms. Add this to the dry ingredients and begin to beat the ingredients together.
Whisk the egg whites until soft peaks form. Fold the fluffy egg whites into the rest of the mixture until all the egg white is combined.
Pour into a loaf tin and top with the 3rd banana for decoration.
