Banana & Peanut butter muffins

What’s better then banana and peanut butter? Nothing!! I’m completely obsessed with these muffins as the moment and they are so moorish. I made them for breakfast, but at this rate I better come up with a plan B.

Ingredients:

250g spelt flour
1tsp baking powder
1/2 tsp bicarbonate soda
1/2 tsp salt
1tsp pure vanilla powder
50g melted butter
100g coconut sugar (or alternative)
2 very ripe bananas mashed
1 splash milk (whatever you usually use)
4 large eggs separated
1 banana slices into 12 chunks
Peanut butter

Method:

Preheat the oven to 180 degrees.

Sieve the flour in to a large bowl, and then add the rest of the dry ingredients and mix it together.

Add the egg yolks, butter and banana into the flour and beat until it’s combined. Add a splash of milk to help it all combine.

Whisk the egg whites until they are stiff. Then add 1/4 of them to the mixture and beat, add another 1/4 and continue to beat. When you add the next 1/4 gently fold it in until it’s all folded in, then repeat with the final 1/4.

Spoon about 2.5 table spoons into the a muffin case and top with a slice of banana.  Put in the oven for 15 minutes.

Once they’re out, allow them to cool for a couple of minutes, then add 1/2 tea spoon of peanut butter on top.
